Homemade Granola/Cereal (as seen in my recent Instagram post)
*From The Barefoot Contessa Cookbook with a few of my wife’s alterations.
4 cups rolled oats
2 cups unsweetened shredded coconut
2 cups sliced almonds
3/4 vegetable oil
1/2 honey
1 1/2 cup dried apricots (dice)
1 cup dried cherries
1 cup dried cranberries
1 cup roasted unsalted cashews
sea salt, cinnamon, hemp seeds, chia seeds (you get to choose how much you’d like to use)
Preheat oven 350 degrees
Toss the oats, coconut, and almonds together in a large bowl. Whisk together the oil and honey in a small bowl. Pour the liquids over the oat mixture and stir with a wooden spoon until all the oats and nuts are coated. Pour onto a 13 x 18 inch basking sheet. Sprinkle sea salt over mixture. Bake, stirring occasionally with a spatula until the mixture turns a nice even golden brown which takes about 30min.
Remove the granola from the oven and allow to cool, stirring occasionally. Add the apricots, cherries, cranberries, and cashews. Sprinkle on hemp seeds, chia seeds, and cinnamon Store the cooled granola in an airtight container
This makes a great snack as well as awesome cereal. Enjoy!
